Cinco De Mayo

Happy Cinco de Mayo day, and happy birthday to LORI & Corey!! Well I must say that being in Hawaii I terribly miss Mexican food!! There are not too many GREAT mexican restaurants out here. Well yesterday our neighbor down the street had a Cinco De Mayo party. It was tons of fun, everyone brought their own mexican dish. Now there are some great cooks out there. It was so yummy to eat some really good mexican food. I loved it, I think I may have had 2 1/2 plates. I love, love, loved it. Now that I have had good mexican food, I am craving it more and more each day. So if you have a GREAT dish/recipe you want to share with me…PLEASE DO. For tomorrow is Cinco De Mayo and I would love to celebrate it with you by using YOUR recipes….thanks!

    Aww, I was sad we couldn’t go- but my stomach just couldn’t have taken all of that yesterday. Maybe I’ll have to make my enchiladas tomorrow that I was going to bring.

    yummy!! i love mexican food – especially when i’m prego! i hope you find a great recipe! i don’t have any super exciting ones – though i do love the enchilada lasagna that shanda posted on the recipebraincramp blog – it’s tasty! happy cinco de mayo!

    oh yummy that fried ice cream looks YUMMY. there are lots of mexican restaurants here but I have yet to find good fried ice cream. All that food looks Delicious.
